Salmon. Its my favorite fish, it is so versatile and used for so many great dishes. The salmon you see in the picture was cook by me. Usually, people cook it 80% on the skin and 20% on the flesh, but I cook it a 100% skin-side-down to ensure the crispiest skin one could ask for and to make up for the 20% that was supposed to be cooking the flesh, I would add butter, herbs and lemon to baste the flesh.( This also helps to 'crisp' up the flesh in contact with the butter, locking in the moisture.)
